It was found to be insol\lble in the \lsUi:'l organic solvents (chloroform, ether, benzene, etc). The mater~al was soluble in water and methaool and fol"''Iled a syrup . 3 Infrared spectra of the methanol extract and of a pyrolozate of tb.e sample were obtained. The spectra were compared wit~ a spect~ of a p~olo-aate of s\lcrose and found to be s i.milar. 'l'lle aubmi ~ted s~ple appears, therefore, to be a sugar. 4. To confirm this, a small quantity of the s a mple wa3 dissolved in ethanol and some 2,4 di.o.itropheaylbydrazine reagent added. n. crys talline precipitate formed on standing. 5. A water solu~ ion of the submit ted sa.11ple vtas f ound to readily redllce Fehling's solution. If the sample was pura sucrose. it would not reduce Fehling'a solution, but in the partially oxidized s 116te of the aople, some hydrolysis products would be presant.
